Tropical & Tiki · collins glass

A vibrant and complex tiki creation by Jeff Berry, this cocktail combines dark rum and gin with a medley of grapefruit, lime, honey, maraschino, and an aromatic whisper of absinthe and bitters.

Ingredients

• 1.5 oz Dark Rum
• 0.5 oz Gin
• 0.75 oz Grapefruit Juice
• 0.5 oz Lime Juice
• 0.5 oz Honey Syrup (1:1)
• 0.25 oz Maraschino Liqueur
• 1 dash Absinthe
• 1 dash Angostura Bitters
• 1 sprig Mint Sprig (optional)

Method

1. Combine dark rum, gin, grapefruit juice, lime juice, honey syrup, maraschino liqueur, absinthe, and Angostura bitters in a shaker with ice.
2. Shake well until thoroughly chilled.
3. Strain into a chilled collins glass filled with fresh ice.
4. Garnish with a fresh mint sprig.
