Aperol Gin Sour

A vibrant and frothy sour balancing the bittersweet notes of Aperol with the botanical crispness of gin and zesty lemon.
Ingredients
- 2 oz Gin
- 1 oz Aperol
- 0.75 oz Fresh Lemon Juice
- 0.5 oz Simple Syrup
- 1 Egg White (from 1 medium egg)
- 1 dash Angostura Bitters (optional)
- 1 Lemon Peel (optional)
Method
- Combine gin, Aperol, lemon juice, simple syrup, and egg white in a shaker without ice.
- Dry shake vigorously for 15-20 seconds to emulsify the egg white.
- Add ice to the shaker and shake again for another 15-20 seconds until well chilled.
- Double strain into a chilled coupe glass.
- Garnish with a dash of Angostura bitters and a lemon peel.
